I got given a free celeriac the other week, after a quick google I decided upon celeriac soup. I made it for the second time this evening and its delicious but so quick and easy. I changed it up slightly using one of my chicken stock pots. I'm a big believer of using animal fats to add flavour and long lasting energy to any dish.
Ingredients:
1 Onion
2 Celery Sticks
2 Garlic Gloves
1 Celeriac
1 Yorkshire Pasture Poultry Stock Pot
A Sprinkle of Ground Nutmeg
50ml of Creme Fraiche
Sweat off your onions, garlic and celery in a saucepan. Add your celeriac and chicken stock and simmer for 20 minutes. Blend as you wish and add a couple of sprinkles of nutmeg and creme fraiche. To be fancy add some toatsed hazelnuts and breadcrumbs.
(I dont bother defrosting my stock before using. I just pour boiling water over it or add to a tray bake as is and within a couple of minutes it has dissolved)
